Cockfighter's Ghost takes its name from a legendary stead- a brave explorer's horse that drowned in the Wollombi Brook, one dark and stormy night, long ago. The Limestone Coast Region in South Australia has a cool maritime climate allowing slow ripening conditions to produce intensley flavoured grapes. The fruit was crushed and fermented at the winery in Polkibin. After fermentation, the wine was matured in small French oak barrels. The Chardonnay is produced from grapes grown on vines which thrive in the sandy loam soils of the Hunter Valley. Pale lemon to lime in colour, this chardonnay has white peach, pineapple and lime aromas.

Lyrup Crossing Chardonnay Wine - 18 Bottles: The excellent quality of the fruit at vintage led to the objective of making a fresh, lightly wooded wine with a degree of oak complexity. Hence, only free run juice was drawn after gentle airbag pressing and then cold settled at low temperatures before fermentation with selected yeast strains. Fermentation was arrested just prior to dryness, giving a wine with some residual fruit sweetness. It was then racked and aged on its yeast lees in a combination of French and American oak barrels to add further complexity. St Hallett is dedicated to translating the tapestry of soils and meso-climates of the Barossa in each of its wines. Blackwell Shiraz, named after Stuart Blackwell senior winemaker since 1973, is sourced exclusively from low-cropping vines in the north and west of the Barossa Valley.
